This boost catalyzed Stauning’s growth, culminating in the establishment of a modern distillery equipped with 24 copper pot stills capable of producing an impressive 900,000 liters annually.

Located in an idyllic rural setting, the new distillery has transformed into a significant tourist destination, drawing approximately 17,000 visitors each year. This influx not only showcases Stauning’s commitment to transparency—guiding guests through the entire production process, from the raw grain to the final bottled product—but also reflects a growing interest in artisanal spirits globally. Vesterby notes that this hands-on experience allows guests to grasp the depths of their whisky craftsmanship, highlighting traditional methods such as kilning, fermentation, and maturation.

Bringing the whisky to international markets has become a high priority for Stauning. In 2023, they launched a non-age-statement Danish Rye in the U.S., subtly priced at $60 a bottle, marking its formal entry. However, what truly excites the brand’s leadership is its recent release: the Sherry Cask Finish Rye. This novel expression, aged in Spanish PX and Palo Cortado sherry-seasoned casks, embodies what Stauning aims to accomplish. It boasts a robust flavor profile replete with notes of toffee, dill, and cardamom, culminating in a lasting finish replete with flavors of prunes and tobacco leaf.

Though priced at $75 with limited 800 bottle units for the U.S. market, Vesterby is optimistic about growth and expanding interest in Danish rye. He envisions an exciting future for Stauning that includes collaborating with world-class chefs to meld fine dining with their spirit. The world may be well-acquainted with Danish cuisine, thanks to the likes of Noma, and Stauning seeks to tap into that narrative around flavor and craftsmanship through whiskey pairings and joint culinary endeavors.

Furthermore, Vesterby emphasizes the importance of bartenders as influencers in breaking ground in the U.S. whisky market. To truly establish the presence of Danish rye, Stauning is keen to position its whisky as a staple within American cocktail culture.
